THE VINES
Besides our own 5 hectares of excellent old vines, when making Pittacum
we seek the finest grapes from different parts of Bierzo area, monitoring
their development all year round as scrupulously as in our own vineyards.
We only select old vines (between 50 and 80 years old), growing on poor soils with the suitable production rates.
Regular checks of each vineyard enable us to choose the ideal plots and time for them to be harvested
Our project is based on the Mencía variety, a grape with a great potential to which we are fully committed.
With plantation densities ranging between 4.000 and 4.500 stocks per hectare we obtain the appropriate average vigour and balance with low production rates per stock.
The training systems used are the traditional
ones in the area: a medium-sized stock with small branches and free-growing
vegetation.
Rather than applying any chemical herbicides or synthetic plant-care products, we make judicious use of 100% organic fertilisers.
Respect for the environment and useful fauna helps us to combat pests.
Whenever necessary, green operations, such as tip-pruning, leaf-removal and bunch-clearing, enable us to maintain the ideal microclimate for each plant, keeping the grape bunches aired and well-lit to help them ripen.
